Job description

The food technologist is concerned with using various food processing technologies to add value to fish species. Work at the National Food Centre involves the use of novel technologies including sous vide, osmotic dehydration, modified atmosphere packaging and freeze-chilling technologies to produce value added seafood products.

Typical work activities

Typical work activities include lab-work, sourcing fish and ingredients, dealing with industry enquiries, writing papers for publications, taking part in national and international seafood conferences, setting up workshops for dissemination of project results and small-scale investigations for industry.
