According to Italian Legislation (G.U. n.273 del 22-11-1989) harvesting shells can be realised by different types of rakes and by manual dredge. When water is more than 3 meters deep, it is possible to use a hydraulic dredge; obviously this excludes internal waters. Harvesting with short manual rakes (rakes with a net sack) can be carried out by the farmer as he walks in the water, or by using long rakes, which can be managed by boat. The boats used to carry out the harvest are generally small, allowing more rapid movement through the shallow lagoon waters.

Harvesting is carried out with certain uniformity in all months of the year; however, the activity increases during November in preparation for the pre-Christmas selling period. All operational activities are related to tide flow. Farmers are generally involved in harvesting for 3 to 4 hours per day six days a week. End product distribution channels include public markets, wholesalers and direct clients. Currently, Italian farmers sell their products within all regions of Italy and throughout Europe (Spain, France, etc). There are almost 4,000 workers in Italy (10 persons at ALMAR) involved in growing and preparing Tapes for the market.
